[5th contest] Rose Petal Caramel Pudding

Rose Petal Caramel Pudding


Ingredients

For layer 1

digestive biscuits, grinded or crushed 1.5 cups

salted butter 3 tbsp


For layer 2

milk 1 cup

whipping cream 200 ml

powdered sugar 1/3 cup

gulkand or rose petal jam 2 tbsp

Few drops of rose essence

Few drops of pink/red color

agar agar powder 1/2 tsp


For layer 3

milk 1 cup

whipping cream 200 ml

powdered sugar 1/3 cup

Few drops of vanilla essence

agar agar powder 1/2 tsp


For caramel garnish

granulated sugar 1 cup


Instructions

1. For the first layer, add butter to crushed digestive biscuits. Mix well and add it at the bottom of each serving glass or bowl. Press it gently.


2. For the second layer, in a pan whisk milk and cream with gulkand/rose petal jam, sugar and agar agar.


3. Boil the mixture, while continuously whisking. After it begins to boil, simmer it for 2 minutes and add in rose essence and pink colour.


4. Then take off from the gas and pour it into the serving glasses over the biscuit layer. Refrigerate it for 15-20 minutes.


5. Meanwhile, repeat the same process for the second layer. Pour the second mixture over the first layer and let it set for 2 hours in the fridge.


6. For the caramelised topping, in a pan add 1 cup sugar and allow it to caramelise.


7. Once it begins to caramelise, keep stirring it till desired consistency is achieved and it has melted completely.


8. Switch off the gas and while its still hot, grease the back of a steel paddle or spoon and using another spoon, pour the caramel over it in a zig-zag manner. This way you can make some caramelised shells.


9. Garnish them over the Rose Petal Caramel Pudding. Your smooth and delicious Rose Petal Caramel Pudding is ready!

My grandma used to make stuffed potato breads in the charcoal oven and God, they tasted heavenly. That’s when I knew I loved food and it made me so happy.


The story behind this recipe is actually very simple, I had tried many Pudding recipes, but nothing that had a rose flavour. So I experimented with rose petals jam and the taste was amazing. Making it with agar agar powder, the pudding had an excellent texture to it.
