[2nd contest] Cracker Chaat with Indian Flavours [Lv.Advanced]

Agar Agar is generally used for desserts and sweet as seen on the internet. Just wanted to create something savory and which could incorporate Indian flavors. Thought of chaat which has all senses of taste e.g., sweet, spicy, tangy, salty, etc. The lower layer is a curd based with a salty taste, the middle layer is tomato soup with tangy and sweet flavors and the topmost is spicy, tangy n sweet with jalapenos n vinegar.

INGREDIENTS
Curd
Milk
Salt
Cumin Powder
Agar Agar Powder
Garlic Cloves
Onion
Butter
Tomatoes
Mint Leaves
Sweet Corn
Black Pepper Powder

Dry Mango Powder
Water

Chopped Jalapenos

🥣 DIRECTION
Step 1. Curd Layer
180 ml Curd
250 ml Milk
1/2 tsp Salt
1/4 tsp Cumin Powder
1 ½ tsp Agar Agar Powder

Beat 120 ml curd with 1/2 tsp salt and 1/4 tsp Cumin powder. Simultaneously boil 250 ml milk and sprinkle 1 ½ tsp of Agar Agar Powder and mix well. Slowly incorporate in curd. Pour the mixture into a glass flat dish to set.

Saute 4 garlic cloves with 1 Tbsp butter. Add chopped 1/2 onion, 2 chopped tomatoes, 1/2 cup sweet corn and 8 min leaves. Saute till soft, add salt to taste, 1/2 tsp Cumin powder, 1/2 tsp Dry Mango Powder, 2 tsp sugar and 1/2 tsp black pepper powder. Pressure cook for 2 whistles.
Step 2. Vegetable Layer
4 Garlic Cloves
1/2 Onion
1 Tbsp Butter
2 Tomatoes
8 Mint Leaves
1/2 cup Sweet Corn
1 tsp Salt
1/2 tsp Cumin Powder
1/2 tsp Black Pepper Powder
2 tsp Sugar
1/2 tsp Dry Mango Powder
1 ½ tsp Agar Agar Powder

Blend the tomato soup well and sprinkle 1½ tsp Agar Agar and give a boil. Pour the soup slowly over the milk and curd layer. Put in the fridge to set.
Step 3. Vinegar Layer
250 ml Water
4 tsp Sugar
2 tsp Vinegar
4 tsp Chopped jalapenos
1 ½ tsp Agar Agar Powder

In a pan take 250 ml water, 2 tsp vinegar, 4 tsp sugar, and 4 tsp chopped jalapenos. Sprinkle 1½ tsp Agar Agar and boil it. Pour it slowly over the soup layer and put it aside in the fridge to set.

Cut thin slices of garlic and toast it brown in a pan for that smoky burnt flavor from it.

Cut the Agar Agar into shapes with cookie cutters and set them on top of salty crackers on the serving tray.
4)
Decorate with roasted garlic slices, mint leaves and sprinkle sev (Fried gram flour condiments) top with hints of spicy-hot red sauce.
