[3rd contest] Creamy Queso Nachos [Lv.Advanced]

When I made the Creamy Queso, I immediately knew it would be great on Nachos and it does not disappoint! Since the queso is made from veggies, you can feel good about eating these nachos and if you have kids, it's a great way to sneak extra veggies in!

Servings: 4 people.
Total Time : 25 minutes. (minus cachew soaking time)
Prep Time : 15 minutes.
Cooking Time : 10 minutes.
Other Time : Cashew soaking time varies 2 hours - 20 minutes / Keep up to 10 days
Size of Container : Medium Bowl * Airtight Container (no freezer)
INGREDIENTS
Soaked and Drained Raw Cashews
Chopped Yellow Potato
Chopped Carrot
Chopped Onion
Nutritional Yeast
Tapioca Flour
Agar Agar Powder
Salt
Garlic Powder
Water (saved from cooking the veggies)
COOKER / TOOL
Blender
🥣 DIRECTION
Step 1. Gather All Ingredients
1 ½ cup Soaked and Drained Raw Cashews
1 cup Chopped Yellow Potato
1/4 cup Chopped Carrot
1/3 cup Chopped Onion
2 Tbsp Nutritional Yeast
2 Tbsp Tapioca Flour
1 Tbsp Agar Agar Powder
1 tsp Salt
1/4 tsp Garlic Powder
1/2 cup Water (saved from cooking the veggies)

Boil the potatoes, carrots, and onions, until soft (about 10 minutes)

Strain the veggies reserving 1/2 cup of their cooking water.
Step 2. Bring to Boil

Placce everything in a blender and blend on high until smooth (about 1 minutes)

Pour your mixture into a medium sized pot and cook over medium heat for about 10 minutes stirring frequently. The mixture will thicken up and become nice and gooey.

Cooking Time : 3-5 minutes.

Blue Corn Tortilla Chips
Canned Balck Beans
Taco Seasoning
Chunky Salsa
Chopped Green Onion
Diced Bell Peppers
Creamy Queso Sauce
[Optional toppings]
Black Olives
Hot Sauce
Jalapenos
Cilantro
Red Onion
Lime
Fresh Tomatoes
Avocado
Tofu Sofritas etc

The toppings are all optional so you can really customize this dish to however you like!
Step 4. Prep Queso Sauce

1)
Prepare the Creamy Queso Sauce, but don't cook it in the pot until you are ready to assemble the nachos.

Heat your black beans up in a small pot with the taco seasoning (3-5 minutes).
Step 5. Arrange Serving Dish

1)
Arrange chips on a large serving dish or individual plates and add toppings; black beans, cheese sauce, salsa, avocado etc.
