[3rd contest]Ten Minute Quesedilla[Lv.intedemiate]

My theory is that you can take any meal or dish and put it on pizza or inside a quesadilla. This is one of the more simple, yet satisfying recipes that follow this mindset.


I'm an accounting clerk by day and a Vegan Food Scientist by nights and weekends. When I'm not making my boyfriend eat all my questionable experimental foods I enjoy digging through bins at thrift stores and staring introspectively at bodies of water.


Servings: 10 people.

Total Time : 35 minutes.

Prep Time : 5 minutes.

Cooking Time : 30 minutes.

Other Time : Airtight container in the fridge or freezer for up to 1 month if frozen

Size of Container : Large Bowl


INGREDIENTS


  • Whole Red Peppers

  • Baby Carrots

  • Regular Sized Carrots

  • Water

  • Coconut Oil

  • Nutritional Yeast

  • Cashews

  • Walnuts

  • Tapioca Starch

  • Lemon Juice

  • Apple Cider Vinegar

  • Hot Sauce (Vinegar Based)

  • Agar Agar Powder

  • Smoked Paprika

  • Garlic Powder

  • Dijon Mustard

  • Onion Powder

  • Liquid Smoke

  • Coriander

  • Cumin

  • Cayenne

  • Salt

🥣 DIRECTION


Step 1. Roast


2 Whole Whole Red Peppers

20 Baby Carrots

3-4 (About 2 cups) Regular-Sized Carrots

1 cup Water

3/4 cup Coconut Oil

1/2 cup Nutritional Yeast

1/2 cup Cashews

1/2 cup Walnuts

1/2 cup Cashews

4 Tbsp Tapioca Starch

2 Tbsp Lemon Juice

2 Tbsp Apple Cider Vinegar

2 Tbsp Hot Sauce (Vinegar Based)

2 Tbsp Agar Agar Powder

2 Tbsp Smoked Paprika

1 Tbsp Garlic Powder

1 Tbsp Dijon Mustard

1 Tbsp Onion Powder

1 Tbsp Liquid Smoke

2 tsp Coriander

1 tsp Cumin

1/2 tsp Salt

1)

Remove stem & seed from the pepper. Roast your red pepper and carrots on a foil-lined baking tray at 550 degrees (or as hot as your oven will go!) for 15 minutes, flip, & cook until the skin has blackened to your preference. Then place them in a sealed container for a few minutes to let them bask in their own smoke for extra goodness.


Step 2. Mix

Once the veggies are roasted, softened, and blackened, throw all ingredients EXCEPT FOR agar agar powder & 3/4 cup of the water into a powerful blender of a food processor. Mix until smooth. Add a little more water if it doesn't come together in a wet paste.


Step 3. Thicken


1)

To activate the agar agar powder: pour 3/4 cup water & Agar Agar Powder into a saucepan and turn on med-high heat. Stir constantly until it thickens, about 3-5 minutes.


Step 4. Combine

Pour the blended cheese mixture into the saucepan & stir together to combine. You can also use an immersion blender at this point to make it extra creamy.


Step 5. Enjoy

  • Bell Pepper any color

  • Small Onion also any color

  • Cup Raisins

  • Sliced Sausage Juice (optional)

  • Curry Powder

  • Garam Masala

  • Tortillas Vegan Smoked Gouda

Step 5. Sautee


1/4 Bell Pepper any color

1/2 Small Onion al any color

1/4 Cup Raisins

1/4 Sliced Sausage Juice (Optional)

1 tsp Curry Powder

1/2 tsp Garam Masala

2 Tortillas Vegan Smoked Gouda


★ TIP ★

For more smokey flavor, double the liquid smoke and add a little more smoked paprika. You can make this a very-low-calorie recipe by omitting the nuts altogether, however, you will lose some of the cheesy consistency and texture. This cheese goes great with crackers (and wine) or on top of plant-based burgers, salads, and sandwiches!

Sautee diced onion and pepper with the raisins. Add curry and garam masala. Set aside, or set in a separate bowl so you can use the same pan for quesadilla-ing.


Step 6. Butter

1)

Butter one side of two tortillas and assemble by placing one tortilla, butter side down on a pan. Add cheese and your sauteed mixture. I always add a little more cheese on top before covering with the second tortilla. (butter side out, of course)


Step 7. Flip & Cook

1)

Cover with lid and cook on low-medium heat until the cheese has melted, then flip and cook til it's all sticking together nicely.
